What is Yeast?

Yeasts are microscopic fungi – single-cell organisms which are generally about 5-10 microns in size. Abundant throughout nature, yeasts can be found on grains; grain by-product; and even in our soil, water and air. Most species of yeast have been proven very beneficial to people, while only a few imperfect yeasts are known to be unhealthy.

Vastly different from other yeasts, the yeast in EpiCor® does not consist solely of yeast cells or yeast biomass. Instead it is a yeast-fermented product designed to provide fermentation metabolites often called "nutrilites." To create these nutrilites, a culture media is inoculated with live yeast cells, allowed to ferment under a specific set of conditions and then dried. The end product contains both the residual live yeast cells used in the fermentation, as well as the metabolites or metabolic by-products of the yeast produced.

This proprietary fermentation and drying process produces a biologically complex product. It contains both the "intracellular" yeast cell nutrients and the "extra cellular" metabolites of fermentation.
